just beet it.

It’s been a while since the last time I shared a juicing recipe, but here’s what I’ve been sipping on most recently: beet juice.  Yum right?  … Okay, I know beets aren’t usually the first ingredient that comes to mind when juicing, but this concoction packs a fruity taste full of great nutrients (beta-carotene, folic acid, vitamin C, calcium, magnesium and more).

For the juice (found in this book), I used one beet, one orange, one granny smith apple, two carrots, and an inch of fresh ginger (not pictured).

Throw it in the juicer (best investment ever) and voila!  The mix turns into a gorgeously vibrant drink that tastes as good as it looks.
